Ingredients:
- 400 gr of white flour
- 300 gr of sugar
- 4 eggs
- 200 ml of mandarin juice
- 150 ml of extra virgin olive oil
- 4 mandarins (peel)
- 1 bag of baking powder
- Almonds as needed
- Pine nuts as needed
- Cranberries as needed
- 150 gr of powdered sugar
- 30 gr egg white
Preparation:
- Wash and dry the mandarins. Grate the peel and set aside. Squeeze them and filter the juice. In a bowl whisk together the eggs and the sugar. Add extra virgin olive oil, mandarin juice, sifted flour and mandarin peel.
- Oil a mould and pour the dough into it. Cook at 170 ° C in a preheated oven for 30 minutes, continuing to cook, lowering the temperature if necessary.
- Once cooked, let the cake rest for 10 minutes in the half-closed oven.
- Meanwhile, prepare the icing: add the icing sugar to the egg whites and mix thoroughly. Pour the icing on the cold cake cold, decorate with pine nuts, dried cranberries, and whole almonds.
