INGREDIENTS:

  • 300 of beef for flank steak
  • 1 bouquet of herbs (rosemary, sage and thymus)
  • 70 g of Feta cheese
  • 100 g of black olives
  • 2 tomatoes
  • 3 basil leafs
  • Intense fruity Extra Virgin Olive oil to taste
  • Salt and pepper to taste

PREPARATION:

  1. First, dry meat with a cloth of paper. Then dress it with salt, pepper and herbs. Put the whole meat in a warm cast-iron pan and cook it for 3 minutes each side.
  2. Meanwhile, prepare the salad. Cut feta cheese and tomatoes into cubes, add olives and basil and dress it with EVO oil and salt.
  3. Now, wrap the meat in a silver foil for about two minutes, then cut it obliquely with a sharp knife.
  4. Serve flank steak with salad and garnish it with EVO oil and a pinch of pepper.
