Ingredients:
- 180 g of black chocolate
- 3 eggs
- 90 g of sugar
- 50 g of extra virgin olive oil
- grounded coffee as needed
- mint as needed
Preparation:
- Melt the chocolate in a bain-marie and let it cool completely. In the meantime mix the egg yolks with the half of the sugar and whisk them. Add the melted chocolate and extra virgin olive oil, stirring constantly.
- Heat the remaining sugar to get a syrup, bringing it to about 80° C. Then begin to whisk the egg whites and drizzle the sugar. Continue until the mixture is shiny. Add the egg whites to the chocolate mixture, incorporating carefully.
- Pour the mousse into small glasses and allow to cool in the fridge for at least two hours. Decorate with coffee powder and a mint leaf.
