Itrana cultivar
The Itrana cultivar is native to Lazio, in particular the province of Latina. The fruits are mainly used as table olives; they are known as Gaeta olives, a specialty of the Pontine town preserved in brine and used to prepare salads, pasta sauces or with salt cod.
