Ingredients:
- 350 gr of flour 00
- 180 gr of sugar
- 4 eggs
- 130 gr of extra virgin olive oil
- 125 gr of Greek yoghurt
- 1 spoon of yeast
- 1 vanilla bean
- 1 lemon
- 1 pinch of salt
Preparation:
- Pour the sugar and the eggs into a bowl. Whip it until the dough gets swollen and soft. Add the extra virgin olive oil and the Greek yoghurt. Continue to mix the dough with the whip, adding the vanilla and the grated lemon zest.
- In the meantime, sift the flour, the yeast, the salt together and add them to the dough while continuing to mix.
- Pour the dough into a mould. Cook at 180° C the cake in a preheated oven for 40 minutes. Let it cool before serving.
