Castellana cultivar
The Castellana cultivar is typical of the central part of Spain, in particular the provinces of Madrid and Castilla La Mancha. It has an almost completely black colour and the fruits are used solely for the production of extra virgin olive oil. It has a very particular bitter, slightly spicy taste, with hints of almond and banana.
